They decided on convection roast as they feel this method helps to retain flavour and ensure an even roast. So what is convection roasting? Basically hot air gently roasts the entire bean, starting from the centre and moving outwards. The great thing about convection roasting is that it is environmentally friendly, helping them to dramatically reduce emissions and improve their footprint.
